| 1/2-stick of Unsalted Butter | 2-lbs. of Yukon Gold (or Yellow) potatoes |
| 1-tablespoon of Lemon Juice | 4-lg. Leeks (white & lt. green parts only - WASH WELL) |
| 1-cup of Half and Half | Freshly ground Black Pepper |
| 4-slices of Bacon (crumbled) or 4.3-oz Hormel Real Crumbled Bacon | 3-cloves of Garlic (grated) |
| 6-cups of Vegetable Broth | |
| 3-fresh thyme sprigs (bundled) |

COOKING INSTRUCTIONS
Chop the white and light green parts of the leeks and wash well.
Melt the butter to over medium heat, then add the leeks and ground black pepper to saute until tender.
Add the potatos, garlic, broth and thyme and simmer for 20-minutes.
Remove the thyme and blend until smooth.
Add in more diced potatoes, the bacon, the lemon juice, the Half and Half and simmer for another 20-minutes.
Garnish with green onion.
